Cucumber Cooler – A Non-Alcoholic Cocktail

Recipe | Makes 1 Cocktail
Acid-Adjusted Pineapple Juice (yields 100ml)
- 100 ml Fresh Pineapple Juice
- 3.2 grams Citric Acid
- 2 grams Malic Acid
Chamomile Tea (yields 250ml)
- 1 Cup Boiling Water
- 6 grams Chamomile Tea Leaves (equivalent of two teabags)
Cucumber Syrup (yields 250ml)
- 250 grams Fresh Cucumber Juice (peel the cucumber skin before juicing)
- 250 grams White Sugar
Cocktail
- 1 ½ oz. Seedlip Garden 108
- ¾ oz. Cucumber Syrup (see recipe above)
- 1 oz. Acid-Adjusted Pineapple Juice (see recipe above)
- 2 oz. Chilled Chamomile Tea (see recipe above)
Method
Acid-Adjusted Pineapple Juice
- Combine citric acid, malic acid with the pineapple juice and stir until fully dissolved.
Chamomile Tea
- Steep the tea leaves in the boiling water for 5 minutes.
- Strain through a mesh strainer.
- Allow the tea to cool.
Cucumber Syrup
- Blitz cucumber juice and sugar in blender until dissolved.
- Strain through a mesh strainer.
Cocktail
GLASS: Rocks Glass
ICE: Ice Cubes
GARNISH: Dandelion Flower | Cucumber Ribbon
- Measure all ingredients into shaker.
- Add ice and shake for 12 seconds.
- Double strain.
- Garnish with cucumber ribbon in glass and dandelion flower.
