Chateau Lake Louise New Executive Chef
LAKE LOUISE, AB – Nicholas Issel has been appointed Executive Chef at Fairmont Chateau Lake Louise, effective March 1, 2021. In his new role, he will oversee the hotel’s culinary operations, including all restaurants, bars and events.
Chef Issel brings over twenty-five years of experience to Fairmont Chateau Lake Louise. With a passion for art, design and wellness, he has put his skills to good use and contributed to seven restaurant openings. He started his career in gastronomy in 2005 as Chef de Cuisine at the Shangri-La Hotel in Cairns and pursued the same role in Vancouver from 2008 to 2012. He then moved on the role of Executive Sous Chef in Singapore for the same chain, a role he held from 2012 to 2014. He was then named Executive Chef at the Dusit Thani Hotel in Manila where he oversaw the revamp of the hotel’s five outlets. He was in the Philippines until 2017. Later that year, he joined the JW Marriott Parq and Douglas Autograph Collection hotels in Vancouver.
Of his new opportunity with Fairmont, Chef Issel stated, “We draw inspiration from the natural beauty of our location and strive to create culinary experiences that rival its majesty. This is why I am so excited to be part of the Fairmont Chateau Lake Louise team.”
